Quinoa is a seed which resembles a grain. It originated in South America and was considered to be a sacred grain by the Incas. Nutritionally it has a very high (10-18%) protein level and a balance of all the essential amino acids. As a food it’s delicious – a little more nutty than rice. It’s easy to cook (about the same as rice) and can be substituted for rice or couscous in any recipe. If you have a rice cooker or Instant Pot (which are both great appliance for busy docs) you can cook quinoa on the white rice settings.
